"Fungi vitamin bombs

The content of vitamins in mushrooms is very different. Some, like the chanterelle mushrooms contain a lot of beta-carotene, the precursor of vitamin A, which we need for the vision and structure of the skin. Many mushrooms are excellent sources of vitamin B-all types. B2 we need for the function of our nerve cells and muscles. Mushrooms and even more the oyster contain a great deal B2. Vitamin B2 body needs at building of skin and mucous membranes. Oyster mushrooms and mushrooms provide as much B2 for the daily needs of the people such as meat and fish, and the birch fungus surpasses them even more. Niacin is a vitamin that the body needs for energy. It is particularly abundant in chanterelles. The oyster mushroom contains a lot of folic acid, which is necessary for the formation of red blood cells in combination with vitamin B12."

" Mushrooms and Vitamin D

The richest sources of vitamin D include fish liver oils and salt-water fish such as sardines, herring, salmon and mackerel. Less vitamin D is contained in eggs, meat, milk and butter. In plant food there is ergosterol, which acts as a provitamin to the formation of vitamin D, in spinach, cabbage, corn sprouts and sunflower seeds.

Fungi, however, contain a great deal ergosterol and are therefore significant vitamin D suppliers. Rich in vitamin D are the mushrooms, chanterelles, porcini and morels. In 100 g fresh mushrooms are 40%, 45% in chanterelles, porcini mushrooms contain more than 60% of the daily requirement of an adult of vitamin D. Even in cultivated mushrooms, oyster mushrooms and especially the shiitake, which is also offered at us and is both fresh and dried to buy, there is plenty of ergosterol."
